Yummy Campfire Recipes for Good Eating

The Secret to Great Cooking

is having the right recipes. We believe in eating well while camping. The first two recipes come from our camping experiences. The third was found online.

Campfire Recipe of Korean Barbecue Short Ribs with rice, broccoli, cucumber salad

4 pounds of Asian cut short ribs about 3/8 inch thick

Marinate with: 1 cup soy, 1/2 cup sugar, 1/4 cup sesame oil, some pepper, and chopped or crushed garlic
Marinate for 1-2 hours before grilling.

Grill until slightly charred, or to preference.

Serve with Rice, pickled cucumber salad, and steamed broccoli florets

Recipe for pickled cucumber salad:

One English cucumber, sliced thin and salted. After 1/2 hour, rinse and wring out the salt and water.

Mix with a sauce made with 1/4 cup apple cider vinegar or white wine vinegar, sweeten to taste preference, 1 tablespoon of sesame oil, add salt to taste.

Campfire Recipe for EasyTaco Salad

Cook one pound of ground beef. Drain. Mix with an envelope of taco seasoning.

Shred 2-3 heads of Romaine lettuce

3 tomatoes diced in large chunks, or a basket of cherry tomatoes

2 avocados, cut into large dices

1 can of pinto beans, drained

1 cup of shredded Mexican cheese

1 pint of salsa or 1/2 cup of Italian dressing

Mix all of the above ingredients together, and finally add

Bag of Fritos or tortilla chips, slightly crushed

 

Campfire Recipe for Pizza Log from HappyMoneySaver

Basically you’re going to make a pizza but roll it to form a rectangle. You will roll it to keep pizza’s ingredients sealed within the dough (like rolling a cinnamon roll). Wrap the pizza in foil and freeze. You can keep the frozen pizza in your cooler to help keep other things in the ice chest cool. It will thaw naturally and be ready for the campfire by dinnertime.

Start with any pizza dough from your own recipe or buy a pre-made dough found in the freezer or refrigerator section of your grocery store. Spread as much pizza or tomato sauce (adding oregano or basil for seasoning, possibly garlic powder). Then sprinkle 8 oz of mozzarella cheese on it, then add your family’s favorite toppings on it.

When camping, cook the pizza wrapped in foil by placing it on the grill or logs for 25 minutes. You’ll want to flip it often. When done, you unwrap and serve your campfire pizza.
